Here's a healthy salad by The Pioneer Woman, Ree Drummond.  My first time to make an Asian Noodle Salad, and boy is it tasty!  If you make it, you may want to scale back on the ingredients because it makes a huge amount.

I found this recipe for Kickin' Baked Rigatoni at Rhoda's Southern Hospitality blog, and caught the slaw recipe on an episode of Everyday Italian.  I've never used fennel before so was eager to try this out.  It did not disappoint.

1-3/4 cups flour
2-1/4  tsp. baking powder
3 eggs, separated
1-1/2 cups milk
3/4 tsp. salt
1 Tbsp. sugar
1/2 cup melted butter

Mix dry ingredients.  Add melted butter.  Add milk alternating with egg yolks.  Fold in stiffly beaten egg whites.  Serves 5.

 I bid on a 45 piece set of Oneida Silver Plate Dinnerware on the Goodwill Website.  The set was only $48 and after learning about the pattern I upped the bid by $1.50, AND I WON.

Tonight, we tried another recipe from Good Housekeeping magazine.  This time for an Indian cauliflower curry stew.  The bones of the recipe seemed good, but to tailor it to my families' likes I added half a chicken and made a few other tweaks.  The meat is purely optional so go ahead and make the meatless version if that's what suits you.  I think the flavors will still be good.

Here's a recipe that's easy and good...a perfect accompaniment to most any meal.  Tonight I'm serving our cornbread alongside Chili.  You may notice that this cornmeal doesn't call for sugar in it.  Most cornbread that I've had in Texas  does not.

1 lb. Spaghetti
3-4 slices bacon2-3 Chicken breasts, cut into 1" chunks
1 small onion, chopped
2 cloves garlic, minced
1 can cream of mushroom soup
1 can cream of chicken soup
½ lb. Velveeta, cubed
½ cup milk, more or less
1 can sliced mushrooms, drained
Preheat oven to 375°.
In a large stock pot, boil spaghetti al dente, in salted water. Drain and dump pasta into a large mixing bowl.

1 cup water
½ cup butter
1 tsp. sugar
¼ tsp. salt

In a medium size sauce pan over medium heat, combine first four ingredients and bring to a boil. Remove from heat.
