No-Bake Energy Bites

Forever searching for snack ideas for the fam, I stumbled across this recipe and was instantly attracted.  Simple ingredients, no prepackaging mystery ingredients, easy, and did I say easy?

This recipe is from Smashed Peas and Carrots blog.

No-Bake Energy Bites

(makes 18-20 bites)

1 cup oatmeal (I used old fashioned oats)
1/2 cup peanut butter or other nut butter
1/3 cup honey
1 cup coconut flakes (I used unsweetened shredded coconut and the bites were still perfectly sweet)
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla

Mix everything above in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.

Be sure to check out other recipes by Maggie on her blog and thank her for sharing this recipe if you enjoy them as much as we do. : )

Bebe's got a new snack

It seems, like most babies, our little girl loves Cheerios.  Doctors recommend that infants avoid honey and nuts among other things so we stick to the plain variety.  Today, I was thinking of ways to jazz up her snack sans honey and/or nuts.  I got to thinking about Chex Mix and came up with this:

Cajun Crunchy-O's
2 cups or so of Toasted Oats cereal (Cheerios or similar type O cereal)
1 tsp. Sweet Paprika
1 tsp. Garlic Powder
1/4 tsp. Kosher Salt
A dusting of Chili powder
2 Tbsp. Unsalted butter, melted
2 tsp. Worcestershire Sauce

Preheat oven to 250 degrees Fahrenheit.

In a large bowl, mix cereal with spices and salt.  Melt butter and combine with Worcestershire sauce.  Pour butter mixture over cereal and toss to combine butter, cereal, and flavoring

Pour onto a jelly roll pan and spread out in an even layer.  Bake for 25-30 minutes, stirring once in between baking time to toast cereal evenly on both sides.

Southern Fried

Some days just leave you fried...
and make you yearn for that little taste of home

Memaw's Hushpuppy Recipe:
1 cup flour
1 cup cornmeal
2 tsp. baking powder
2 Tbsp. sugar
1 egg
¾ cup butter, melted
1 tsp. salt
½ tsp. baking soda
1 medium onion, finely minced

Combine all ingredients in a mixing bowl. Grease your hands and roll batter into balls; gently lower hushpuppies into hot oil to fry. Hush puppies should float in the oil when they’re done and should be golden in color.

Happy Foodie Friday, y'all!
